陳新民教授在「稀世珍釀」的自序中提到他初識葡萄酒的故事：「1979年11月底，在我剛剛到達德國慕尼黑市留學不久的一個晚上，天上已經飄滿鵝毛般的雪，一位德國朋友攜來一瓶萊茵河約翰山堡(Schloss Johannisberg ，見本書第72號酒)遲摘級的葡萄酒為我洗塵。開瓶一嘗之後，我立刻被這瓶1976年份、碧綠中泛出金黃色光、芳醇至極的雷司令美酒所征服，也讓我真正體會到古人為何對酒以“瓊漿玉液”來形容！以後在歐洲及美國多年的求學研究及旅行中，每到一地我都是刻意、如蜜蜂尋蜜般地尋酒。」
陳新民教授如此形容Schloss Johannisberg Riesling Spätlese：其「開山名作」遲摘酒便有股高級香檳酒的芳香，但入口毫無香檳氣泡的刺鼻干擾，反而是一股清香幽淡、蜂蜜般甜甜的感覺，真如古人形容「口神雙暢」！（「稀世珍釀」第228-229頁）。
約翰山堡(Schloss Johannisberg ）是德國酒的傳奇，因為貴腐甜酒得由來就是因為在十八世紀時，Schloss Johannisberg是修道院的資產，必須等院長的命令才能進行採收，修道院派遣的信差送訊給在遠地的院長，但信差因中途耽擱遲到，等達時葡萄已乾癟發黴，僧侶們只好採這些葡萄來釀酒，因此釀造出貴腐甜酒。

2005 Schloss Johannisberg Riesling Spätlese
It is incidentally, here at Schloss Johannisberg, that the first botrytis affected wine was ever made in 1775. Before these rotten grapes were almost destroyed, since no one knew the difference between grey and noble rot. This 2005 Spätlese has a pineapple nose which combines with multi-layered fruity flavours fruit. Juicy initially, like biting in a bunch of ripe grapes, followed by a wave of minerals. It has considerable substance without being heavy and an enormous elegance. It is a complete and wonderfully balanced late harvest Riesling.
